Umami With a Momofuku Touch

To its quickly increasing stock of pantry merchandise, Momofuku has now added some commonplace staples: toasted sesame oil, soy sauce and tamari. The oil is cold-pressed, and the soy sauce and the gluten-free tamari are steeped in kombu, to provide them components of complexity and umami, not simply salinity.

Momofuku sesame oil, tamari and soy sauce, $30 for 3 eight-ounce bottles; tamari and soy sauce, $12 every or $20 for the 2; sesame oil, $25 for 2, store.momofuku.com.
